Drumsticks vs Legs — Yes, There’s a Difference

A chicken leg is the whole leg quarter: thigh + drumstick joined at the knee, typically 10–12 oz per piece and 50–55 minutes in the oven. A drumstick is just the lower half — the meaty club below the joint, 4–5 oz each, and it cooks faster (40–45 min at 425°F). Ingredients

  • 8 bone-in, skin-on chicken drumsticks (about 2 lb)
  • 1 tbsp olive oil (or melted butter)
  • 1 tsp baking powder (aluminum-free — check the label)

Common Questions

Do I need to flip the drumsticks?

Yes, once. Starting skin-up gets the top rendering, then flipping at 25 minutes crisps the bottom that’s been sitting on the rack. Without a flip you’ll get one gorgeous side and one pale side.

Should drumsticks reach 165°F or higher?

Higher. 165°F is the USDA safety minimum for chicken breast. Dark meat — thighs and drumsticks — has more connective tissue that only breaks down at 175–185°F, where the meat actually becomes more tender and juicier, not drier. Pull them at 180°F if you’re aiming for the sweet spot.

Can I skip the wire rack?

You can, but the underside will steam and stay soft. If you don’t have a rack, put the drumsticks directly on foil sprayed with oil and flip twice during baking (at 15 and 30 minutes) instead of once.

Can I marinate them first?

My husband (who is extremely picky) loved the liver & onions so much!! I didn’t have any beef broth or Sherry so I used about a tbl of Worcestershire and 1/4 c of white wine …..it was scrumptious
