Marinade, sear, build the bowl

Partially freeze the beef for 30-45 minutes until firm to the touch but not solid

Slice the beef paper-thin, across the grain, at 1-2 mm

Mix the marinade ingredients in a large bowl

Coat the beef slices in the marinade, separating them with your fingers, and refrigerate for 2 hours

Prep the bowl base by cooking the rice, wilting the spinach, blanching the bean sprouts, slicing the cucumber, and julienning the carrot

Sear the beef in a hot cast-iron skillet or wok, in batches, for 60-90 seconds per side

Fry the eggs sunny-side up, with runny yolks

Build the bowls by placing the rice at the bottom, the beef in one corner, and the vegetables and kimchi in separate quarters around it
