Quick answer: Season and cook 1 lb diced chicken thighs with taco spices (5 min). Butter one side of a 10-inch flour tortilla, place butter-down in a dry skillet on medium heat, sprinkle ½ cup shredded Monterey Jack + ½ cup sharp cheddar, add ½ cup chicken, another ¼ cup cheese, fold in half. Cook 2–3 minutes per side until deep golden. Rest 1 minute before cutting into wedges.

The Two Rules for a Great Quesadilla
Restaurants get quesadillas right because they follow two non-negotiables the home kitchen usually skips. First: butter on the outside of the tortilla, not oil in the pan. Butter conducts heat evenly and browns the tortilla in patches instead of frying it into greasy leather. Second: cheese on both sides of the filling. The cheese is the glue — a single layer means the tortilla slides apart when you cut it, and half the filling ends up on the cutting board.

Using leftover chicken? Our shredded chicken guide covers three stovetop-to-slow-cooker methods that drop straight into this recipe.
Method — Step by Step
- Cook the chicken. Heat olive oil in a skillet on medium-high. Add diced chicken, taco seasoning, and lime juice. Cook 5–6 minutes until seared and cooked through (165°F). Off heat, stir in red onion. Transfer to a bowl.
- Wipe the skillet. Same pan, wipe out any dark bits, return to medium heat (no oil this time).
- Butter & cheese layer 1. Butter one side of a tortilla thinly, edge to edge. Place butter-side-down in the skillet. Immediately sprinkle ½ cup of the cheese mix on one half of the tortilla.
- Fill. Add ½ cup of the cooked chicken over the cheese, then another ¼ cup cheese on top.
- Fold. When the underside is golden (about 2 minutes), fold the empty half over the filling. Press gently with a spatula.
- Flip & finish. Cook 2 more minutes, flip carefully, cook the second side 1–2 minutes until deep golden and cheese is fully melted.
- Rest & cut. Transfer to a cutting board, rest 1 minute (so cheese sets), then cut into 3–4 wedges with a sharp knife or pizza cutter.

Common Questions
Fold or two-tortilla stack?
Fold is faster and easier to flip; stack (two tortillas with filling sandwiched) gives you more filling per bite but is harder to flip cleanly. For weeknight cooking use fold; for a shared plate use stack and cut into 8 wedges.
Corn or flour tortillas?
Flour. Flour tortillas bend without cracking and crisp evenly. Corn tortillas are for tacos and enchiladas — they split when folded around melted cheese. If you want the corn flavor, use a whole-wheat-and-corn blend tortilla.
What cheese melts best?
Monterey Jack is the gold standard for melt and stretch. Oaxaca cheese (Mexican mozzarella) is the traditional choice and even better if you can find it. Cheddar alone gets greasy; pepper jack adds heat. Avoid mozzarella-only — too wet.
Can I bake instead of pan-fry?
Yes — assemble on a sheet pan, brush both sides with melted butter, bake at 425°F for 12 minutes, flipping once. Not quite as crisp but hands-off and lets you make 4 at once.
Serve With
Sour cream and salsa are the default, but a bowl of fresh pico de gallo, a scoop of chunky guacamole, and a side of Mexican rice turn two quesadillas into a full plate. A lime wedge and a cold Modelo close it.
Storage & Reheating
Refrigerator: 3 days wrapped in foil. Reheat in a dry skillet on medium 2 min per side to recrisp — never microwave (soggy tortilla).
Freezer: Cook, cool, wrap individually in foil then a freezer bag. 2 months. Reheat from frozen in a 375°F oven for 15 minutes.
How do I keep quesadillas from getting soggy?
Two things: (1) drain any liquid off the cooked chicken before adding, and (2) don’t over-fill. Half a cup of chicken plus ¾ cup total cheese per 10-inch tortilla is the ratio — more filling means cheese doesn’t seal the edges and the tortilla steams instead of crisps.

Scrumptious
My husband (who is extremely picky) loved the liver & onions so much!! I didn’t have any beef broth or Sherry so I used about a tbl of Worcestershire and 1/4 c of white wine …..it was scrumptious

So glad your husband enjoyed it, especially being picky! Thank you for sharing your version, it makes me smile knowing it turned out scrumptious!
This was amazing
This recipe turned out really amazing! It’s juicy and spiced deliciously. I definitely would use less of the spicy pepper next time, but it really was delicious and I don’t think I’ll make chicken legs any other way from now on.!

Thank you for taking the time to leave such a thoughtful review. I’m really glad to hear the recipe turned out juicy and full of flavor for you. That’s exactly what I was hoping for when putting it together. Good call on the spicy pepper as well. Adjusting the heat level to your own taste is always the best approach, and using a little less next time should make it just right for you. I really appreciate you trying the recipe and sharing your experience. It’s great to know it worked so well for you.
