What is chicken tetrazzini?

Chicken tetrazzini is an American baked pasta dish invented in early 1900s San Francisco and named after opera singer Luisa Tetrazzini. The classic form — spelled out on Wikipedia’s tetrazzini entry — is diced poultry in a butter, cream and sherry sauce, tossed with spaghetti, topped with parmesan or almonds, and browned in the oven.

The version most home cooks know now leans on cream of mushroom soup for shortcut ease. From-scratch versions (Natasha’s Kitchen, Giada, Sip and Feast) use a proper white-wine or sherry béchamel and taste noticeably cleaner. This recipe is the from-scratch route.

Ingredients for a 9×13 pan

For the pasta and chicken

  • 12 oz (340 g) spaghetti, thin spaghetti or linguine
  • 3 cups (about 450 g) cooked shredded chicken — rotisserie is fine
  • 1 lb (450 g) cremini or button mushrooms, sliced
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme leaves (or ½ tsp dried)

For the cream sauce

  • 4 tbsp unsalted butter
  • ¼ cup (30 g) all-purpose flour
  • 3 cups (720 ml) chicken broth, warm
  • 1 cup (240 ml) heavy cream
  • ⅓ cup (80 ml) dry sherry or dry white wine
  • ½ tsp fine salt, plus black pepper
  • Pinch of freshly grated nutmeg (optional but classic)
  • ½ cup (50 g) grated parmesan, plus more for the top
  • 1 cup (110 g) shredded mozzarella or fontina

For the topping

  • ¾ cup (75 g) panko breadcrumbs
  • 2 tbsp melted butter
  • ¼ cup (25 g) grated parmesan
  • 2 tbsp chopped parsley (added after baking)

Step-by-step: from raw pasta to golden top

  1. Preheat and prep. Oven to 375°F (190°C). Butter a 9×13 baking dish.
  2. Cook the pasta 2 minutes short. Salt the water aggressively, boil the spaghetti for 2 minutes less than the box says. It’ll finish in the oven — pre-cooked to al dente turns to mush. Drain and toss with a splash of olive oil so it doesn’t clump.
  3. Sear the mushrooms. Melt 2 tbsp butter in a wide skillet over medium-high. Add mushrooms in a single layer, don’t stir for 3 minutes, then toss and cook 4 more until golden. Add onion, cook 3 minutes; garlic and thyme, 30 seconds. Transfer to a bowl.
  4. Build the roux. Same skillet, medium heat, melt 4 tbsp butter. Whisk in flour and cook 90 seconds until it smells nutty — no color yet.
  5. Add liquids in stages. Slowly whisk in the warm broth, ½ cup at a time. Once smooth, whisk in cream and sherry. Simmer 3–4 minutes until the sauce coats the back of a spoon.
  6. Season and cheese. Salt, pepper, nutmeg. Off the heat, whisk in ½ cup parmesan and the mozzarella until melted.
  7. Combine. In a big bowl (or the empty pasta pot), toss the drained pasta, shredded chicken, mushroom mixture and sauce. The sauce should look loose — pasta absorbs a lot in the oven.
  8. Top and bake. Transfer to the baking dish. Mix panko with melted butter and remaining parmesan; scatter over the top. Bake uncovered 25–30 minutes until bubbling around the edges and the top is deep gold.
  9. Rest 10 minutes. Straight from the oven the sauce looks thin — it thickens as it cools. Scatter parsley on top and serve.

Why do most chicken tetrazzini recipes turn grainy?

Grain is a cheese problem, not a sauce problem. Parmesan and mozzarella both break when they go above 180°F for too long — you get the fat leaching out into little pools and the protein tightening into curds. Two rules keep it silky.

Melt cheese off the heat

Pull the pan from the burner before you whisk in the cheese. Residual heat is plenty to melt it, and the sauce won’t hit the danger zone. If your sauce needs to be warmer to accept the cheese, warm it back up gently after.

Grate from a block

Pre-shredded parmesan and mozzarella are coated with anti-caking cellulose that resists smooth melting. A block of parmesan and a block of fontina, grated at home, melts into the sauce like butter. It’s a five-minute upgrade with an outsized payoff.

Don’t over-bake

Once the edges are bubbling and the top is gold, pull it. Extra time in the oven doesn’t improve the flavor — it just cooks the cream longer and pushes it toward that broken, oily look. Set a timer at 25 minutes and check.

Make-ahead and freezing

Tetrazzini is one of the great make-ahead casseroles. Assemble it fully, don’t add the panko topping yet, cover tightly, and refrigerate up to 24 hours. Bring to room temperature for 30 minutes, add the topping, then bake as directed — add 5–10 minutes since it’s starting colder.

To freeze: assemble in a foil pan (or line your dish with foil so you can lift the frozen block out later), wrap in plastic and foil, freeze up to 3 months. Thaw overnight in the fridge, then bake. Straight-from-frozen also works — cover with foil, 375°F for 60 minutes, uncover and add topping, another 20 minutes.

  • Sauce broke and looks oily? Whisk in 2 tbsp of hot broth off the heat — the emulsion usually comes back.
  • Casserole dry after reheating? Reheat covered with foil and a splash of milk drizzled over the top. Pasta drinks up sauce as it sits.
  • Sherry too strong-tasting? Simmer the sauce an extra 2 minutes to cook off the alcohol before adding cheese. Or swap for ¼ cup of white wine.
  • Top browned before the middle heated through? Tent with foil for the last 10 minutes.

What to serve with chicken tetrazzini

Tetrazzini is rich, so the sides should be light. A big simple green salad with lemon vinaigrette and a slice of homemade garlic bread is the classic pairing. For a lighter meal, skip the bread and lean harder on the salad with something bitter — arugula or radicchio.

Can I use rotisserie chicken for tetrazzini?

Absolutely — it’s the shortcut most home cooks reach for, and it’s what I default to on weeknights. One medium rotisserie chicken yields close to 3 cups of shredded meat, exactly what this recipe needs. Skip the skin and pull the meat while it’s still warm; it shreds easier.

What’s the best pasta shape for tetrazzini?

Spaghetti is traditional and what the dish was invented with. Thin spaghetti or linguine work equally well. Short shapes like penne or rigatoni are fine but change the character — you lose the tangle-and-fork factor that makes tetrazzini feel like tetrazzini.

Can I make chicken tetrazzini without mushrooms?
